You can decorate poker chip cookies by whipping up our royal icing and dividing the icing into thirds. Dye one third white, one third black and one third red. Place each icing color in a piping bag with a fine round tip and alternate piping the black and red frostings onto each cookie as the base color. Create the dotted lines characteristic to professional poker chips. Roll out the strips of clay in the color or colors that you would like and cut the strips with a razor. They should be the same size that you would like the final dots to be. Press the strips firmly into the larger cylinder making sure to eliminate all air bubbles.
